Auntie Babie loves Spanish food, so for her birthday we thought we'd do her favorite cuisine, but different from what them oldies are used to.
Darth Vader here creeped the lolas out a little. Lol! :P
Because it was a Monday and there was no degustation, Vask let us use The Gallery
Matsu wines to complement our dinner
We all had the 6-course tasting menu which included the following dishes:
Foie Gras on Mango Toast - my favorite at Vask!
Sous Vide Tuna Pintxo - garlic chili oil, caramelized onions, piquillo pepper
Mejillones Tigre - bechamel, bell pepper, mussels
Its creaminess and spiciness got my appetite up and running.
Huevos Hongos y Cebolla - 62 degree sous vide egg, porcini mushrooms, breadcrumbs,
port wine sauce, onion foam
Pulpo ala Gallega - octopus in olive oil, whipped potato, crispy paprika
Tuna in Dashi Kombu - calamansi infused tuna, quinoa risotto, algae
Corte Iberico, Manzana y Mostaza - 62 degree Iberian pork, apple mash, mustard sauce,
white wine, apple confit. The meat was tender and very flavorful. My only complaint:
Three pieces was not enough!
Pistachio Cappuccino - coffee crumbs, pistachio cream, coffee foam, milk ice cream,
Nespresso capriccio, frangelico. I quite enjoyed the flavors and textures of this dessert.
Chocolate Truffles - no explanation needed
