Pierre, Revisited ♥ ♥ ♥ ♥

 

Pierre is one of my favorite restaurants in Hong Kong.

The place is understated yet classy, elegant yet comfortable.

At Pierre, every course gives birth to many baby plates, like a degustation within a degustation.

Thinly-sliced breast, Bigarade sauce with seasonal berries

Foie gras cubes, slow simmered shallots;
apple and celery julienne with parsley, marmalade of tangy preserved shallots. 
Stuffed thigh like a pate, seasonal mesclun.
