Checked out this ramen place in Central few months ago

The place is small and customers plenty. Shugetsu does a pretty good job maximizing the space.

Noodles are made in-house using Japanese flour

The menu is simple with a few items only. Seasonal dishes are available, too.

We ordered an Abura Ramen, a dry ramen with pieces of chasiu, bamboo shoots, bean sprouts,
green onions, and flavored with fish powder, wasabi powder, and homemade scallop oil

Add in raw egg, some soy sauce, some vinegar and then mix

Of course, we had to try the Tsukemen or "Dipping Noodles"

Grab some carbs, dip in the savory broth, then slurpppppp away.
I love how the noodles are thick and chewy, but find the broth too rich and oily.
